Puff Pastry Apple Pies
This is a very easy apple pie recipe that uses store bought puff pastry sheets. Whip this tasty treat up in no time and don’t forget to enlist the help of your little ones! They will love to lend a hand!
Makes 4 apple pies
2 tbsp sugar
1/4 tsp ground cinnamon
1 egg (beaten)
2 sheets frozen puff pastry (thawed)
All-purpose flour for dusting
Coarse sugar for sprinkling
Pre-heat oven to 400°F (or 200°C).
In a small bowl, combine 2 tbsp of sugar with 1/4 tsp of ground cinnamon.
Peel, core and dice 2 apples.
In a medium sized bowl, mix the apples with the cinnamon sugar.
Beat 1 egg for the egg wash.
Cut 2 thawed puff pastry sheets into squares on a lightly floured surface.
Brush the edges of a puff pastry square with the egg wash.
Spoon a few scoops of the apple mixture into the centre of the square.
Top with another puff pastry square and seal with a fork by pressing down onto the edges.
Make 3-4 slits on the top of the pastry and brush with egg wash.
Place pastries on a parchment lined baking tray and sprinkle with coarse sugar.
Bake in the oven at 400°F (or 200°C) for 15-20 mins or until the top is golden brown.
Allow to cool and enjoy!
